PICKUP DATE FOR YOUR
MEGABAG:
We produce megabags exclusively on Fridays, for pickup either Friday afternoon or Saturday morning. We can't conserve it longer as these are fresh curds, unless you give us the permission to put them in the fridge (but trust us, it's better fresh!).
How much does the MEGABAG cost?
Due to this being a manual process, each bag will have a slightly different weight, with a minimum of 5kg.
Our 2kg bag is priced around 17$ per kilo, so we were thinking

which keeps about the same price per kilo.

Preserving the Freshness of Your Curds
To be clear, the MEGABAG is a lot of cheese.
In order to keep them fresh, follow these steps. First, separate the curds into large bags or containers (we recommend high quality freezer grade bags or sealable containers).
You can leave the curds out of the refrigerator for up to 24 hours, but they should be refrigerated after that.
If you want to store them for longer periods, you can put the curds into the freezer for up to 6 months or in the refrigerator for up to 30 days.
REVIVE THE SQUEAK
After spending the night in the fridge, curds can lose their squeak.This is because the cheese has contracted and so there’s not as much sponge left to squeak. To revive the squeakiness of the curds, place them inside a container or bag in a pot of warm water (40℃) for 10-15 minutes.
Separate Curds
To preserve the freshness of your curds, we recommend you separate them into large freezer-safe plastic bags or containers. This will allow you to refrigerate them as the MEGABAG might be a bit too large to fit.
Refrigerate or Freeze
After separating the curds into containers, you can choose to either refrigerate or freeze them. If you plan to consume them within 30 days, refrigeration will do the trick. However, if you want to store them for longer periods, you can put them in the freezer for up to 6 months.
Revive the Squeak
If your curds have lost their squeakiness, don't worry! You can easily revive it by placing the curds in a bag and immersing them in a pot of warm water (warm like a hot shower) for 15 minutes. This will bring back the squeak that cheese curds are known for.
